Zambian Women Cooking the Evening Meal

Zambian women cooking a staple food in that part of Africa known as "Nishima." This is simply a mixture of cornmeal and salt. It is a very heavy and filling food and, as the women told me, very labor intensive. They prepared this for all three meals and it is served cut into what I call "blocks."
