Squid with Tomatoes

Ingredients
- 2 pounds squid
- 3 tablespoons olive oil
- 1 Spanish onion, chopped
- 3 garlic cloves, chopped
- 1 pound tomatoes, skinned and diced
- 1½ tablespoon wine vinegar
- ½ teaspoon saffron strands, crushed in a little water
- Salt and pepper
- A bunch of parsley, chopped finely
- A bunch of coriander, chopped finely
Directions
- Clean the squid and cut the body into half inch rings. Cut the tentacles into small pieces.
- Heat the oil in a pan and fry the onion until soft and golden. Add the garlic and fry until it begins to color then add the tomatoes, vinegar and saffron. Season.
- Add squid to the sauce, adding just enough water to cover. Simmer for 4-5 minutes for baby squid or until the squid is tender and opaque which can take up to 45 minutes for larger squid.
- Add the herbs and serve with bread or on a bed of rice.
