Tortilla Campesina (Potato Pudding)

Ingredients

• •Olive Oil
• •4 onions
• •100 grams smoked bacon, chopped
• •1 teaspoon garlic powder
• •1 kilogram boiled potatoes with skin and cut into dice
• •Olive oil
• •6 tablespoons cream
• •2 teaspoons paprika
• •salt and black pepper
• •12 eggs

Directions

1. 1Chop the onions and sauté them in a some oilwith the bacon.
2. 2Mix the rest of the ingredients and seasonings and add the onion and bacon mixture.
3. 3Add the beaten eggs, and pour the mixture into a greased oven-proof baking dish.
4. 4Cook in a medium oven until the eggs are set and the top is a bit browned.
