Masaco de Yuca (Yucca casserole)

Ingredients

• •1/2 pound bacon
• •3 yuccas
• •Salt to taste

Directions

1. 1Cook the peeled yuccas in boiling water until they are soft.
2. 2Remove the yuccas from the water and grind them, similar to mashing potatoes.
3. 3Cut the bacon into little pieces and fry them. Add them to the mashed yuccas and mix them well.
4. 4Place this casserole in an oven-proof dish and heat it in an oven.
5. 5Serve. This makes a yummy side dish for any Bolivian barbecue.
