Chicken Pelau

Ingredients

  • 1 chicken, cut up into pieces
  • Marinade:
  • Thyme
  • Salt
  • Pepper
  • Vinegar
  • Onion powder
  • A few big handfuls rice
  • Baby peas, peas or pigeon peas
  • Fresh chopped chives or scallions
  • A little brown sugar

Directions

  1. Take a whole chicken cut up into pieces, marinate it in thyme, salt and pepper, vinegar and onion powder.
  2. You'll need a heavy-duty pot or Dutch oven. Brown the chicken in vegetable or peanut oil in your big pot, adding to it a little brown sugar. After it's super brown on all sides, add enough water, about an inch in the bottom of the pot.
  3. Next, cover tightly so your chicken stews. Then after about 20 minutes, add another inch of water and a few big handfuls of rice. You'll want to have about a third less rice than you do water. Then lower the heat until it's barely simmering and cook until the rice is almost done.
  4. You may need to stir it up occasionally in case the rice starts to stick or burn anywhere -- which it always does. Finally, add baby peas, peas or pigeon peas and a ton of fresh chopped chives or scallions.
