Chicken Pelau

Ingredients
- 1 chicken, cut up into pieces
- Marinade:
- Thyme
- Salt
- Pepper
- Vinegar
- Onion powder
- A few big handfuls rice
- Baby peas, peas or pigeon peas
- Fresh chopped chives or scallions
- A little brown sugar
Directions
- Take a whole chicken cut up into pieces, marinate it in thyme, salt and pepper, vinegar and onion powder.
- You'll need a heavy-duty pot or Dutch oven. Brown the chicken in vegetable or peanut oil in your big pot, adding to it a little brown sugar. After it's super brown on all sides, add enough water, about an inch in the bottom of the pot.
- Next, cover tightly so your chicken stews. Then after about 20 minutes, add another inch of water and a few big handfuls of rice. You'll want to have about a third less rice than you do water. Then lower the heat until it's barely simmering and cook until the rice is almost done.
- You may need to stir it up occasionally in case the rice starts to stick or burn anywhere -- which it always does. Finally, add baby peas, peas or pigeon peas and a ton of fresh chopped chives or scallions.
