Pineapple Upside Down Cake

Ingredients

  • For the topping:
  • 1/2 cup unsalted butter, melted
  • 1/2 cup brown sugar
  • 1 can pineapple rings, drained
  • Maraschino cherries (optional)
  • For the cake:
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup pineapple juice

Directions

  1. Preheat your oven to 350°F (180°C). Grease a 9-inch cake pan and set aside.
  2. In a small bowl, mix together the melted butter and brown sugar. Pour the mixture into the bottom of the greased cake pan.
  3. Arrange the pineapple rings on top of the brown sugar mixture in the cake pan. Add maraschino cherries to the centers of the pineapple rings, if desired.
  4. In a medium bowl, sift together the flour, baking powder, baking soda, and salt.
  5. In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs and vanilla extract and mix until well combined.
  6. Gradually add the flour mixture to the butter mixture, alternating with the pineapple juice. Mix until well combined.
  7. Pour the batter into the cake pan over the pineapple and brown sugar mixture.
  8. Bake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  9. Allow the cake to cool in the pan for 5 minutes before inverting it onto a plate.
  10. Serve the pineapple upside down cake warm or at room temperature. Enjoy!
