Pineapple Upside Down Cake

Ingredients
- For the topping:
- 1/2 cup unsalted butter, melted
- 1/2 cup brown sugar
- 1 can pineapple rings, drained
- Maraschino cherries (optional)
- For the cake:
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup pineapple juice
Directions
- Preheat your oven to 350°F (180°C). Grease a 9-inch cake pan and set aside.
- In a small bowl, mix together the melted butter and brown sugar. Pour the mixture into the bottom of the greased cake pan.
- Arrange the pineapple rings on top of the brown sugar mixture in the cake pan. Add maraschino cherries to the centers of the pineapple rings, if desired.
- In a medium bowl, sift together the flour, baking powder, baking soda, and salt.
- In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs and vanilla extract and mix until well combined.
- Gradually add the flour mixture to the butter mixture, alternating with the pineapple juice. Mix until well combined.
- Pour the batter into the cake pan over the pineapple and brown sugar mixture.
- Bake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Allow the cake to cool in the pan for 5 minutes before inverting it onto a plate.
- Serve the pineapple upside down cake warm or at room temperature. Enjoy!
