Kuba (Barley Christmas Casserole)

Ingredients

• •1 1/2 cups barley
• •1 1/2 cups dried mushrooms
• •7 cups water
• •2 teaspoons salt
• •¼ teaspoon black pepper
• •2 cups garlic, finely minced
• •3/4 cup dried onion, finely chopped
• •1/4 cup butter
• •1 teaspoon marjoram

Directions

1. 1Cook the onion in the butter until it’s translucent. Wash the mushrooms until they’re free from grit.
2. 2Add the barley, mushrooms, salt and water to the onions and cook, uncovered, until the water has evaporated, stirring frequently. The mixture will be very thick.
3. 3Add the remaining ingredients. Place in a greased casserole or baking dish and bake at 350 degrees for 30 to 35 minutes.
