Rödkål (Red Cabbage)

Ingredients
- 1 red cabbage (about 1 kilogram), cored
- 1 yellow or red onion
- 4 sour apples
- 2 tablespoons margarine or vegetable oil
- 8 cloves
- 5 Jamaica peppers
- 1 to 2 tablespoons sugar
- 3 tablespoons red wine vinegar and/or lemon juice
- Salt to taste
Directions
- Cut the red cabbage into thin slices. Cut the apples (without cores and peels) into pieces. Slice the onion.
- Melt the butter in a large pot over medium heat.
- Add the cabbage, onion, apples, vinegar, spices and salt.
- Cook covered over low heat for one hour, stirring occasionally.
- Add more vinegar or lemon juice according to taste. Serve hot.
- If prepared during high season for red cabbage (autumn - early winter), the dish can readily be deep frozen and be kept for at least half a year.
- Red Cabbage is a traditional dish, together with ham on Christmas eve for many Swedish families; however, it is often served outside of the Christmas season with ham, pork, spare ribs or similar types of meat.
