Štrukli (Sweet-Cheese Strudel)

Ingredients

  • 1 to 1 2/3 pounds flour
  • 1 egg
  • 2 tablespoons oil
  • Salt
  • 1 tablespoon mild vinegar
  • lukewarm water
  • Filling:
  • 3 1/2 to 5 ounces butter
  • 1 1/4 pounds fresh cottage cheese
  • 3 1/2 ounces sour cream
  • 3 1/2 ounces sugar
  • 4 eggs
  • Topping:
  • 14 fluent ounces fresh cream

Directions

  1. Make a small depression in the center of the sifted flour, put one egg and oil into it, mix with a knife and add the lukewarm, slightly salty water combined with the vinegar. Knead the dough until completely smooth. Divide the dough into three equal parts, brush them with oil and set aside.
  2. Cover a table with a well-floured cloth, roll out one of the dough pieces with a rolling pin and continue stretching the dough with floured hands towards the edges of the table until it becomes thin. Cut off any thick edges. Leave the stretched dough to dry for a while and then sprinkle with some of the melted butter. Spread one-third of the prepared filling over one-half of the dough and roll into a thin strudel with the help of the tablecloth.
  3. Press the roll every 4 inches with a large wooden spoon, and then cut out the štrukli with the edge of a plate. The edges of the dough must be tightly sealed. Make more štrukli from the remaining parts of the dough and filling.
  4. Cook the štrukli in slightly salted boiling water for 10 minutes, but do not cook large quantities at the same time. Take the štrukli out of the water with a spoon and arrange them in a heat-resistant bowl. Pour fresh cream over the štrukli and bake in a hot oven for about 15 minutes.
  5. Serve hot, and sprinkled with sugar, to taste.
  6. Filling preparation: Mix the softened butter with the strained and creamed cheese, whisk eggs and sugar until light and fluffy. If necessary, add a small amount of sour cream, depending on the cheese consistency.
