Poisson Grille (Grilled Fish)

Ingredients
- 4 fish fillets (preferably fresh and locally caught, such as snapper, grouper, or kingfish)
- Juice of 1-2 lemons
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh herbs for garnish (such as parsley or cilantro)
- Lemon wedges for serving
Directions
- In a small bowl, combine the minced garlic, lemon juice, paprika, ground cumin, ground coriander, salt, and pepper to create a marinade.
- Place the fish fillets in a shallow dish and pour the marinade over them, ensuring that the fish is evenly coated. Cover the dish and refrigerate for at least 30 minutes to allow the flavors to infuse.
- Preheat the grill to medium-high heat. If using a charcoal grill, make sure the coals are hot and evenly distributed.
- Remove the fish fillets from the marinade and pat them dry with paper towels to remove excess moisture.
- Brush the grill grates with olive oil to prevent the fish from sticking. Place the fish fillets on the grill and cook for 3-4 minutes on each side, or until the fish is cooked through and has grill marks.
- While grilling, baste the fish with any remaining marinade to keep it moist and flavorful.
- Once the fish is cooked, remove it from the grill and transfer it to a serving platter. Garnish with fresh herbs and lemon wedges.
- Serve the grilled fish hot, accompanied by side dishes such as rice, salad, or grilled vegetables.
