Haluški (Drop Noodles with Sauerkraut or Feta Cheese)

Ingredients

  • Noodles:
  • 2 eggs beaten
  • 1 cup flour
  • pinch of salt
  • 1/2 tsp baking powder (makes them fluffy)
  • enough water to moisten
  • 2 pureed raw potatoes (optional)
  • Sauerkraut:
  • 1/2 pound butter
  • 2 chopped onions
  • 1 small head cabbage
  • Salt, garlic, pepper to taste
  • Feta Cheese:
  • 1 stick butter
  • 2 pounds pot cheese, farmer’s cheese, Feta cheese, or cottage cheese

Directions

  1. Mix all ingredients for the noodles together in a bowl with handle to form a thick paste.
  2. Boil pot of water.
  3. Drop 1/2 teaspoon of dough into boiling water. If it stays together, puffs and comes to the top the dough, it is fine. If it falls apart add a little more flour to the dough, test again.
  4. Drop by tiny spoonfuls into water.
  5. Dip spoon into water makes dough slide off easier.
  6. Cook until all come to the top and are tender.
  7. Drain.
  8. For Potato drop noodles add 2 pureed raw potatoes to the same recipe. It makes more noodles than without the potatoes.
  9. In Slovakia, these are made with a special pan just for these dumplings; however one can easily be improvised. If you take a black plastic tray, the kind meat come in at the grocery store and drill about 50 holes into the bottom with a 1/4 inch drill, then sand it to smooth off all the edges, it will work great. When your water comes to a boil, pour all your noodle batter into the tray all at once. Holding over water, use spatula to push the batter thru the holes. In less then a minute all the batter is in the water.
  10. This make very uniform dumplings, and they all cook at the same time. If they are too big make a smaller one with 1/8 inch holes, or 1/2 inch holes if you want the dumplings bigger.
  11. To make the dumplings with sauerkraut, melt butter in a pot and fry 2 chopped onions.
  12. Add 1 small head of cabbage chopped.
  13. Fry until browned and add salt and pepper and garlic powder.
  14. Use a double batch of noodles and mix into the fried cabbage.
  15. Cook on low until it’s hot.
  16. To make pot cheese and noodles, double batch of either the regular or the potato noodles.
  17. Fry in pot in butter or margarine.
  18. Add 2 pounds pot cheese, farmer’s cheese, Feta Cheese, or cottage cheese.
  19. Mix, heat, and use salt and pepper to taste.
