Pfeffernusse (Pepper nut dessert )

Ingredients
- 1/2 cup light corn syrup
- 1/4 cup vegetable shortening
- 2 tablespoons butter
- 1/2 cup molasses
- 1/3 cup light brown sugar, packed firmly
- 2 large eggs
- Juice of 1 lemon
- Grated rind of 1 lemon
- 3 cups unbleached, unsifted flour
- 1/4 tsp. salt
- 1/4 tsp. baking soda
- 1/4 tsp. ground ginger
- 1/4 tsp. cream of tartar
- 1/2 tsp. ground cinnamon
- 1/8 tsp. ground cloves
- 3 tbsp. granulated sugar
- 1 lb. confectioners' sugar
Directions
- Preheat the oven to 350 degrees. Heat the corn syrup until it’s lukewarm. Add the shortening and butter and stir. Add the molasses and brown the sugar. Beat in the egg yolks. Add the lemon juice and lemon rind. In a large bowl, combine the flour, salt, baking soda, ginger, cinnamon and cloves. Stir them into the corn syrup. Using a melon ball cutter (or a spoon) drop balls of the sticky dough onto an ungreased non-stick cookie sheet. Bake for 11 minutes, then let them cool. Beat the egg whites lightly. Add cream of tartar, then beat thoroughly until soft peaks form. Add granulated sugar and continue to beat until stiff peaks form. Dip each drop into the meringue and then into the confectioners’ sugar. Serve and Enjoy!
